When we say dark, we usually mean 70% and above. And when we say 70%, we're referring to the amount of cacao (or cocoa) in the bar.
For us, since we're a two-ingredient (base) chocolate maker, 70% means 70% roasted cacao and 30% organic cane sugar.
And that's it.
